Before refrigeration and other new fangled devices milk was cooled in many different ways.
Here you can see milk coming out of a container vessel passing over what looks like an old washboard but is, in fact, a series of cold water filled pipes inside a metal jacket. Rather like an old car radiator. Cold water is passed continuously through the pipes thereby cooling the milk from cow temperature to a more reasonable storage temperature.
The milk then passes through a filter before entering the churn. The churn would then be sent to the dairy for further processing.
When I was a lad and visiting my uncle’s dairy farm I did not like the milk warm direct from the cow. So being a canny farmer he told me I could have pigeons milk instead! This was lovely and cold…and I liked it. I was only when I went back some years older that I discovered that pigeons milk was cooled cow’s milk and that Jim’s pigeon milk had entered into the family folklore. Such is fame!

Guess what this is.
It’s dried conger eel!
It’s made in Soria using a traditional method tat goes back to the 17th century. The conger eel is hollowed out so that air and sunlight filter through, thus curing it better. A cane is run through the eel stretching it out while hanging.
To rehydrate, simply steep in water. It’s great in soups, stews and with rice. Not to be missed.

Openpan (www.openpan.net ) is a catering company specialized in sandwiches/wraps for lunches ay gyms, airports etc. We’ve come up with some gourmet wraps, with a special focus on nutrition and sustainability.
